I’m a geek about food safety. I enjoy learning about all the different organisms that inhabit our kitchen space and how temperature and water activity effect their life cycles. In this section I will take a look at different food safety topics and rate them on a safety scale of:
- I would NOT do this (least safe)
- I would eat this (pretty safe, but some risk)
- I would feed this to my children (most safe)
I will also include other Food Safety Topics in this section.
I am not a food scientist or a doctor. I do have a lot of experience being responsible for the safe preparation of meals served to thousands of people though. Here’s a summary of my experience: 20 years cook in commercial kitchens, 10 years executive chef, 10 years catering director, 5 years California Department of Food and Agriculture Licensed Meat and Poultry Inspector, 2 years Master Food Preserver, 34 years Adventurous Eater, 6 years Mother.
